Odysea Nocellara di Castelvetrano Olives are large, luscious green olives that offer a delightful introduction to the world of olives. With their mild, sweet, and buttery flavour complemented by a meaty texture, they are perfect for both olive aficionados and newcomers alike.
Grown in the sun-drenched fields of Sicily, these olives are harvested by hand from late September to October, at the peak of ripeness. The traditional Castelvetrano curing process involves soaking the olives for 10-14 days, followed by rinsing with fresh water. This gentle method effectively removes any bitterness while preserving their vibrant colour and firm bite, resulting in a truly exceptional olive.
